TAHITIAN CHICKEN FAFA

This is one of my favorite chicken dishes, its a dish from Tahiti, it combines coconut milk and fresh spinach.
The original recipe calls for 1 whole chicken, 1/4 litre cocnut milk, 50 g chopped ognions, 2 garlic cloves, salt&pepper, and 250 g cooked spinach (fafa)

This drink is from Beachbum Berry`s book Sippin Safari, and as i don`t have all the exact ingredients, this is my version:
¼ oz Fresh Lime Juice
½ oz Unsweetened Pineapple Juice
½ oz Orange Juice
½ Passion Fruit Syrup
1 ½ oz Havana Club Blanco
1 ½ oz Lemon Hart Jamaican
